Nebbiolo不是義大利種植面積最廣的品種,卻是當地原生品種. 是一種晚熟型的品種,能夠明顯地展現風土的差異,也相對地非常挑剔生長環境,主要集中生長在意大利中部靠北地區.  Nebbiolo一詞中nebbia與霧相關,因Langhe區丘陵在採收季節經常出現的霧氣;另外葡萄外皮上覆蓋的一層如霧般的白色天然蠟(pruina)亦有人說因而得名.

相較於義大利另一個重要品種——Sangiovese的明顯果香,Nebbiolo的果味相對收斂,但卻多了些皮革、八角等沈穩的大人風味。口感相對喝起來頗為厚實,單寧和酸度表現非常突出. 原因在Langhe丘陵區較乾旱的土壤能讓葡萄的根努力向下伸延更深處尋找養份,因此Nebbiolo所吸收的養份也多人一等,釀出來的葡萄酒在果香的風味中又滲透著多一重層次與細膩感。

Nebbiolo葡萄酒通常需要較長時間陳釀,最少為2-3年,長則可達8-10年之久,在這漫長的等待過程中,不但都不失美酒的本色,酒色會從原先優雅的深寶石紅色,轉為磚紅色;香氣上則會帶有更明顯的玫瑰花香、成熟櫻桃氣息。另一方面,酒中富含的單寧也已失去濃重苦澀味,變得非常圓潤和豐滿,喝起來相對柔軟順口。

Nebbiolo的辛香料風味較突出,再加上單寧非常厚重,所以非常適合搭配油脂豐富的紅肉料理。像是烤肉、野味料理等香料調味豐富的肉類料理一起享用,都很美味!總歸一句,此品種絕對是重口味料理愛好者的搭餐好幫手!

IN THE CELLAR
Fermentation: In stainless steel tanks at controlled temperature with
maceration on the skins of 12-18 days. Malolactic fermentation in oak.
Aging: Over 12 months in French oak barrels of 25 hl and tonneaux (500 L)
Bottling: Upon a passage in stainless steel tanks, it is bottled without
filtration and rests 12 months before being released on the market.
Release: 30 months after harvesting
Bottles produced: About 5.000
Bottle size: 0,75 L

TASTING NOTES
Bright ruby-red with garnet reflections. Intense nose packed with rosehips, ripe red fruits and marinated cherries. Balsamic and spicy hints, powder, dark chocolate and hazelnut in the background. In the mouth, it is elegant, harmonious with good freshness, velvety tannins and a long finish. Perfect reflection of the variety of origin, it shares bouquet and elegance with the Barolo.

SERVICE SUGGESTIONS
Perfect combination with roasted or stewed meats. It is the noble
compendium for the hand-made tajarin with white truffle of Alba. Excellent with aged cheeses.

EVOLUTION
A long-lived wine that can be stored for 7-8 years. We recommend keeping the bottle in horizontal position, in the dark at a constant temperature.
